The land was originally the Flying Cow Ranch, assembled in the 1950s when Massachusetts accountant Charles Oliver Wellington bought roughly 18,000 acres of swampland; the ranch's name nodded to his aviation background and his initials, C.O.W.

At its agricultural peak about 2,000 acres grew strawberries, claimed to be the largest strawberry patch in the world.

The U.S. Army Corps of Engineers built a levee south of the property in 1952-1953, enabling development, and Wellington was approved as a planned unit development in 1972.

It functioned largely as a bedroom community with few shops or restaurants until incorporating as a village on December 31, 1995, by a razor-thin 138-vote margin; Kathy Foster became its first mayor in 1996.
